This is one of my favourite rice which is made in just 5 to 10 mints. Very delicious and can be made even in left over rice.Here is the recipe for you.
Pepper's / Capsicum - green,yellow,red- chopped finely
Spring onions- chopped finely( only white onion part)
Carrot- chopped finely
Pepper power-2 tsp
Salt as needed
Oil 4 tsp
Heat a kadai, add oil,once its heated,add green chillies,slit it lengthwise, then add the spring onions,add chopped carrot and atlast the pepper's which is finely chopped(green ,yellow, red) and let it be half cooked.Cook this for almost 3-5 mints and then add the rice which is already done and add pepper powder(2 tsp) and salt as per your taste,mix well and keep on heat for 5-8 mints more.Once its heated properly,garnish it with coriander leaves.
